Our Kitchen Standards

  • Cook food from scratch, in small batches
  • Support and use local organic ingredients
  • Use humanely raised grass-fed meat and free range poultry that is free of hormones and antibiotics
  • No processed or deep-fried foods
  • Avoid genetically modified food (GMO)
  • Use only wild line-caught or sustainably farmed fish
  • Use only natural, non-hydrogenated oils in our cooking
  • Use organic grains whenever possible
  • Use local breads and pastries made with natural ingredients
  • Serve food fresh and hot, not reheated
  • Follow sustainable practices like our full composting/recycling program that aims for ‘zero waste’ and our use of ‘to go’ packaging made from biodegradable sugar cane fibers
  • Keep food affordable without compromising quality
