Our Kitchen Standards
- Cook food from scratch, in small batches
- Support and use local organic ingredients
- Use humanely raised grass-fed meat and free range poultry that is free of hormones and antibiotics
- No processed or deep-fried foods
- Avoid genetically modified food (GMO)
- Use only wild line-caught or sustainably farmed fish
- Use only natural, non-hydrogenated oils in our cooking
- Use organic grains whenever possible
- Use local breads and pastries made with natural ingredients
- Serve food fresh and hot, not reheated
- Follow sustainable practices like our full composting/recycling program that aims for ‘zero waste’ and our use of ‘to go’ packaging made from biodegradable sugar cane fibers
- Keep food affordable without compromising quality
