

Javier Canales Partner Javier Canales and Steve De Cosse have been working together since the Slow Club was founded. Javier has been involved in restaurant management and staffing for over 15 years. He is the energy and drive behind the day-to-day operations and management of Acre Café and The Exploratorium. Javier is also actively involved in the growth of our popular Acre Box Lunch service.


Adam Kesselman Partner
Adam has a background in international consumer brand management, which he combines with his passion for cooking and health. A chef and active athlete, Adam values the taste and nutrition he finds in fresh, seasonal foods, and is inspired by innovating in the fields of sustainability and management. With over 10 years management and restaurant experience, Adam is active in Acre Gourmet’s daily operations, from developing and growing relationships with producers and customers, to consulting on food program concepts and kitchen design.
